A hearty casserole made with ground turkey, diced zucchini, and cheese is a comforting a delicious dinner.

When your garden is overflowing with zucchini and you need a new recipe to try, this German turkey zucchini casserole is ready for you. It's super flavorful and cheesy, making it a great dish for the whole family.
We've been enjoying this meal a lot lately. It's one that the kids have even requested again after the first time I made it, so that's how I know it was a winner.
This recipe is inspired by a recipe from My Best German Recipes. I did a little digging on the web for other similar recipes and what makes this a German cuisine per se. I saw a couple other similar ones, but not exact.
This original recipe calls for beef, but I like turkey in this recipe. It also contains some bacon, so I like the lighter turkey with the bacon.
The original recipe also leaves the cheese for topping up to you. I've found it to be great with a combination of sharp cheddar and mozzarella.
I like this combination as sharp cheddar provides nice flavor, and the mozzarella provides that melt factor. However, many others will probably work well, too.
This casserole is easy to put together. You start by cooking bacon and then the turkey. Then stir in onion, garlic, zucchini, and seasonings. Once everything is cooked, you stir in cream cheese.
When the cream cheese is combined, you transfer it all to a baking dish and top with the grated cheese. Then you bake it until it is hot and the cheese is all melted.
You can top this casserole with some dried or fresh minced parsley if you'd like for a bit more color and garnish.
I like to serve this casserole with a side of crusty bread or garlic bread, and a cucumber salad or green salad for a complete dinner.
While this recipe calls specifically for zucchini, it will work with other summer squash as well. You can use yellow squash, yellow zucchini, patty pan squash, etc. in place of the zucchini here if that's what you have on hand or prefer.
This year we've been graciously gifted a lot of zucchini and yellow squash from family and friends. We like a lot of our standby recipes and zucchini bread, but I like to try out some new ones to enjoy zucchini and summer squash whenever we have an abundant amount.

German Turkey Zucchini Casserole
Ingredients
- 4 slices bacon, chopped
- 1 lb. ground turkey
- 1 small sweet onion, diced
- about 1-1/2 lbs. zucchini, diced (about 2 medium)
- 3 garlic cloves, minced
- salt and pepper, to taste
- 1/2 teaspoon dried oregano
- 8 oz. cream cheese
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated mozzarella cheese
- parsley for topping, optional
Instructions
- In a large skillet, heat the bacon over medium heat, stirring occasionally. When the bacon is almost crisp, add the ground turkey and cook while breaking apart.
- When the turkey is almost cooked through, stir in the onion. continue to cook, stirring often, until the onion is translucent.
- Lightly grease a 7" x 11" baking pan. Pre-heat the oven to 400 degrees.
- Stir in the zucchini. Stir in the garlic, salt, pepper, and oregano. Cook on medium-low heat, stirring often, until the zucchini just becomes tender. If the food begins to stick to the bottom of the pan, add about a quarter cup of water and stir well.
- Turn off the heat and stir in the cream cheese until smooth and well-combined.
- Spread the mixture into the baking dish. Top with the grated cheese.
- Bake for 20-25 minutes, until hot and the cheese is all melted. Top with parsley, if desired. Serve.
