Yellow squash can be used in many of the same ways as zucchini. They are both summer squash and are similar in flavor, texture, and recipe application.
There are many types of summer squash including zucchini, yellow zucchini, straight neck yellow squash, crookneck yellow squash (which may or may not have bumps), pattypan (or flying saucer) squash, round (or eight ball) zucchini, and more.
Just like winter squash, summer squash are versatile and come in many varieties. Summer squash generally have thin skin and do not store long, as opposed to many winter squash varieties that store well.
Summer squash need to be refrigerated and used shortly after picking. They are have a soft flesh and the skin can be left on when eaten.
To extend their shelf life, you can grate and freeze summer squash into portions (such as 1-cup or 2-cups) and then use it throughout the year in breads, pasta sauces, soups, and more.
