Sheet pan Halloween confetti cookie bars #HalloweenTreatsWeek

These Halloween Confetti Sheet Pan Cookie Bars are both fun and delicious. They are also easy to make and make enough to feed a crowd.

It's one of my favorite weeks of the year, #HalloweenTreatsWeek! Each year a group of bloggers share spooky, fun, and creative recipes for Halloween. You can see more recipes for today at the bottom of this post. 

Chocolate chip cookie bars are a favorite of mine to make for parties because they are easy and delicious. You don't have to scoop or roll any cookie dough and they make a lot. 

These cookie bars are a twist on that because they are like chocolate chip cookie bar and a funfetti cookie combined, but with Halloween colors. 

For these cookie bars, I used a mix of white chocolate chips and semi-sweet chocolate chips. Dark chocolate chips would also be a good choice in place of the semi-sweet. I like the black and white combination for this Halloween dessert, but you can use all white or all semi-sweet if you prefer. 

Then I added these Halloween sprinkles that contain white, black, purple, and orange confetti sprinkles. I've seen some Halloween sprinkles that contain a lime green color before as well instead of the white. Those would be a great choice for these bars, too. 

Another thing I love about these cookies is that they are made on a sheet pan. You simply use your fingers to press the dough into a half sheet pan and bake. Then cool, cut, and serve. Super easy and no fuss! 

You can cut these cookies into squares or rectangles. I generally cut these into 24 pieces, making two dozen cookie bars. Feel free to cut them smaller, or larger, depending on your preference.

These cookie bars are soft and moist from the brown sugar and they are super flavorful as well. These are such an easy treat to make for a kids' party or classroom treat. 

Be sure to not over-bake these cookie bars to ensure they stay soft and moist. Pull them out of the oven when the edges are just turning golden.

Give these sheet pan Halloween confetti cookie bars a try this year. Put a plate of these out at a Halloween party and they will disappear!

Sheet Pan Halloween Confetti Cookie Bars

These Halloween Confetti Sheet Pan Cookie Bars are both fun and delicious. They are also easy to make and make enough to feed a crowd.

Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1-1/2 cups lightly packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 cup, plus 2-3 tablespoons Halloween confetti sprinkles

Instructions

  1. Preheat the oven to 350 degrees. Lightly spray a baking sheet (18" x 13" sheet pan) with cooking spray.
  2. In a bowl of a stand mixer or large bowl with a hand mixer, cream together the butter and brown sugar until light and fluffy.
  3. Mix in the eggs and vanilla.
  4. Add the flour, baking powder, and salt and mix together starting on the lowest speed and then increasing. Mix until just combined, scraping the sides of the bowl as needed.
  5. Slowly mix in the chocolate chips and sprinkles.
  6. Place the dough onto the baking sheet and use your fingers to gently press it down and spread it evenly across the whole pan.
  7. Sprinkle the remaining 2-3 tablespoons of sprinkles on top (depending on how many you want).
  8. Bake for about 20-23 minutes, until the edges are golden and just set.
  9. Let cool completely and then slice and serve. These will keep in an airtight container for several days.
