Glazed strawberry cake mix brownies are an easy and cheerful dessert made with a box of cake mix and a simple glaze. They are perfect for a birthday, Valentine's Day, or anytime you want an easy dessert.

I've seen a lot of cake mix brownie recipes out there. The basic method is using a box of cake mix, 2 large eggs, and oil and then baking the mixture in an 8-inch by 8-inch baking pan.
This turns the baked cake mix into a more dense and fudgy brownie consistency, rather than turning out like a fluffy cake. You are cutting back on a egg and leaving out the water that you would use for the usual box cake recipe.
These recipes are often made with chocolate cake mix, but you can use other flavors, too. Now, technically I suppose strawberry would not be a brownie per se, but this is the same texture and consistency of a typical brownie. So, we are calling them brownies.
The glaze really makes these strawberry brownies extra special. The touch of strawberry jam adds a bit of color and strawberry flavor. The color of these, especially with the pink glaze, makes them so lovely for Valentine's Day.
Another option would be to add about a half cup of white chocolate chips to the batter of these brownies before baking. I really enjoy white chocolate with fruit flavors. Dark chocolate would probably also be lovely in these.
When you make these, the batter will be thick. That's okay. Use a rubber spatula to spread the batter evenly in the baking dish before baking.
Also be sure to not over-bake the brownies. You want to bake them until a toothpick comes out clean and they are just pulling away from the edges of the pan and starting to turn a light gold.
This will help to keep the inside nice and moist and ensure that they have that fudgy brownie texture. Take them out and check around 19-20 minutes and then decide if they need a couple more minutes or not.
Let them cool completely before adding the glaze so that it does not melt into the brownies. After the glaze has dried, they are ready to be cut and enjoyed.

messy as baking a from-scratch recipe can be sometimes. This makes it
perfect for little ones who are interested in baking and helping in the
kitchen.

Glazed Strawberry Cake Mix Brownies
Ingredients
- cooking spray
- 1 box strawberry cake mix
- 2 large eggs
- 1/3 cup olive (or vegetable) oil
- 1/2 cup powdered sugar
- 1 tablespoon strawberry jam
- about 1 tablespoon milk
Instructions
- Preheat the oven to 350 degrees. Spray an 8-inch by 8-inch baking pan with cooking spray.
- In a medium bowl, stir together the cake mix, eggs, and oil until combined. The batter will be thick.
- Evenly spread the batter into the baking dish.
- Bake for about 20-22 minutes, until an inserted toothpick comes out clean and the edges have just started to turn golden.
- Let cool completely.
- In a small bowl, stir together the powdered sugar and strawberry jam. Then stir in a tablespoon of milk. You want the glaze to be spreadable, but not runny. If it's too thick add a few drops of milk until your desired consistency.
- Spread the glaze evenly over the brownies and let it dry.
- Cut into squares to serve. Store leftovers in an airtight container for a day or two.
