Homemade Greek house dressing is a perfect salad dressing for summer vegetables. It's easy to make and adds delicious flavor to your salads, chicken, and more.
Homemade dressings are often quite simple to make. However, you do need to have ingredients on hand like extra virgin olive oil, different vinegars, spices, and herbs. Once you have those, it's generally quick to throw together a delicious salad dressing at home.
Mediterranean and Greek-inspired food have become a fast favorite in our house over the past year or so. I started learning to make pita bread at home last year. I have loved practicing making it and eating up the results.
Once I was making pita bread, we started having Greek salads, pita sandwiches, falafel, hummus, and other pita-friendly meals much more often. We all enjoyed these dinners a lot - even the kids! I've been playing around with making Greek dressing a lot as well as this easy lemon garlic tahini sauce to accompany our meals.
Since I have a giant oregano plant in my herb garden, I always have dried oregano on hand. It adds that distinct flavor to Greek dressing along with a punch of fresh garlic, red wine vinegar, and a touch of Dijon mustard. Fresh lemon juice really adds a nice, bright touch to this dressing. However, you can use all red wine vinegar if you don't have a lemon.
This dressing is delicious on a Greek salad with lettuce, cucumber, tomatoes, feta, red onion, and any other ingredients you like such as grilled chicken or steak. It also works well as a marinade for chicken and to use on pita sandwiches. You can double the recipe and use half and the marinade and half for a dressing.
We love these Greek-inspired meals for hot summer days and when our gardens, CSA or farmers' markets are bursting with fresh summer vegetables. Salads are a perfect summer time dinner when you don't feel like cooking a lot. If you want to add protein like steak or chicken, you can fire up the grill. Hummus with pita bread or pita crackers makes a great addition as well.
When I make homemade dressings, I like to put the ingredients into a glass canning jar and then top with a reusable lid and shake it very well. I find it works well and doesn't leak. You can use any jar you have as long as the lid fits on very tight and secure. A reusable salad dressing bottle or just a bowl with a whisk will also work.

Homemade Greek Dressing
Ingredients
- 1 small garlic clove, pressed or finely minced
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice (or more red wine vinegar)
- 1/2 cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Place all of the ingredients into a glass canning jar and top with a well-secured lid. Shake vigorously to mix and again before serving.
- Alternatively, you may place all of the ingredients into a bowl and whisk well. Whisk again before serving to re-incorporate.
- Taste and adjust salt and pepper, if needed.
- Store in the refrigerator and allow to come to room temperature before shaking and serving.
