With a few pantry staples and some fresh milk and butter, you can make a batch of chocolate pudding at home that is way more delicious than the ones that come in a box mix. Use a good cocoa powder and a nice quality vanilla extract for the most flavorful pudding.
The secret to getting a smooth and creamy pudding that doesn't have any lumps is a lot of whisking. You want to whisk your ingredients throughout the entire process of making your pudding.
First add all of the dry ingredients to your saucepan and whisk them well to break up any clumps. Then you want to slowly pour in the milk, whisking well the entire time to prevent any clumping.
While you are cooking the pudding, whisk it the entire time. This will result in a smooth and creamy pudding.
When the pudding is finished cooking, pour it into your ramekins or bowls. The cover it with plastic wrap so that the plastic wrap is touching the tops of the pudding to prevent a "skin" from forming on the top of each pudding.
Then refrigerate for several hours or overnight. Carefully pull off the plastic wrap before serving. The tops of the puddings will not be "perfect", but these are a family dessert and you can always cover the tops with whipped cream if you want, too.
This recipe will make four servings of chocolate pudding. You can double it easily to make more if you want. I find a lot of pudding recipes make a lot of pudding, and with our family of four, this is the perfect amount.
I've made this pudding with cow's milk only and whole milk is best (I've also made it with a mix of 2% milk and half and half coffee creamer). Using whole milk results in a thick and creamy pudding.
Homemade chocolate pudding is a perfect family dessert for Valentine's Day, or anytime you want a sweet creamy and chocolaty dessert.
Plus, I bet everyone will be happy to have their own individual dessert! Desserts that come in their own individual portion are always fun.
