Delicata squash sticks (or fries) are perfect for serving up with burgers, sandwiches, wraps, quesadillas, and more. They are similar to a sweet potato fry, but have a bit more texture from the skin and have a sweet squash flavor.
Delicata squash are one of my favorite winter squash because they don't need to be peeled and they have a flavor profile that reminds me of sweet potato combined with butternut squash and even a little sweet corn flavor.
They are delicious and turning them into a dip-able stick makes them approachable to kids and those who may not be the biggest winter squash fans. Dips tend to make vegetables more appealing for kids and adults alike sometimes.
I like to make a version of the creamy maple mustard dipping sauce for these delicata squash sticks. It's creamy, a little sweet, and a bit tangy, and the flavors go perfectly with the squash and smoked paprika. For this recipe I used a grainy mustard. You can use other dips like ranch dressing, ketchup, honey mustard, etc.
I often cut delicata squash in half lengthwise and then into half moons, but for these roasted sticks, I prefer to cut them into quarters and then lengthwise into sticks that are straighter and easier for dipping.
Place these roasted smoked paprika delicata squash sticks on a platter in the center of the table and watch them disappear!
Tip: delicata squash seeds are small and perfect for roasting! They are smaller and thinner than many pumpkin and squash seeds and roast up crispy and delicious. Save the seeds and roast them up for a tasty snack or salad topping.
Roasted Smoked Paprika Delicata Squash Sticks
Ingredients
- 2 lbs delicata squash (approximately), about 2 medium squash
- olive oil
- 1/2 teaspoon smoked paprika
- salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven to 425 degrees. Line two rimmed baking sheets with parchment or silicone baking mats.
- Cut the ends off of each squash. The cut each one in half crosswise and then lengthwise. Scoop out the seeds and strings.
- Cut each squash quarter lengthwise into about 1/4-inch sticks.
- Drizzle each baking sheet with about a teaspoon of olive oil. Divide the squash onto each baking sheet in a single layer. Drizzle with a little more olive oil. Sprinkle each baking sheet of squash with 1/4 teaspoon smoked paprika, a few grinds of pepper, and a sprinkle of salt.
- Place in the oven (one on the upper rack and one on the lower rack). Roast for 11 minutes and then flip the squash with a spatula. Rotate the baking sheets and roast for another 10-13 minutes, until they are golden and fork tender.
- Serve with a dipping sauce of your choice such as this creamy maple mustard sauce, honey, ketchup, etc.
