Where are all my dill pickle fans?! I'm a big lover of all things pickle, but dill are my favorite. Dill pickle pizza has been making an appearance on our menu frequently these days. Once you give it a try, you'll understand why.

This pizza has a fresh garlic and olive oil base and is topped with mozzarella cheese for the gooey factor along with some sharp cheddar cheese for the extra flavor kick. 
 
Use your favorite and most flavorful dill pickles here. You can buy dill pickle chips that are already sliced, or use your favorite whole dill pickles and slice them yourself.
 
An extra touch of dill weed makes this pizza even more delicious. I use fresh during garden season when it's available, and dried during other times of the year.

To make this pizza a bit spicy, you can add a pinch of red pepper flakes on top, or under the cheese. You can also have the red pepper flakes on the side for those who may like to add them.

We have homemade pizza about once every week or so. The whole family loves it and it's such a versatile meal with endless ways to top it. 
 
Plus, making homemade pizza is pretty easy once you get a crust recipe down. Recently, I've been making a lot of crust with my sourdough starter discard. Store bought dough also works great and saves time.
 
This pizza goes well with a vegetable tray and ranch dressing for dip, or a side salad, for a complete meal.  When we have pizza we almost always have a side of cut up raw vegetables for dipping or a salad with it. 
 
Another of my favorite pizza side dishes is Roasted Buffalo Cauliflower. Pizza and wings are a common combination here in the Buffalo area, so we love the hot sauce and blue cheese flavors with our pizzas.

Garlic Dill Pickle Pizza

Garlic Dill Pickle Pizza

Dill pickle slices, dill weed, garlic, and two kinds of cheese make this dill pickle pizza irresistible to all the pickles lovers out there.

Ingredients:

  • prepared pizza dough, store bought or homemade (my current favorite)
  • 1/3 cup extra virgin olive oil
  • 5 garlic cloves, minced or pressed
  • salt and freshly ground black pepper, to taste
  • 8 oz. mozzarella cheese, shredded
  • 4 oz. extra sharp cheddar cheese, shredded
  • about 2-1/2 cups dill pickle slices
  • 1 tablespoon minced fresh dill, or 2 teaspoons dried

Instructions:

  1. Divide the pizza dough in half. On a lightly floured surface, roll each dough ball out into about 12" circles if using pizza stones, or into longer ovals if using baking sheets (fit to your pan).
  2. If using a baking sheet, lightly grease with olive oil. Place one rolled out crust onto each baking sheet or pizza stone.
  3. Preheat the oven to 450 degrees.
  4. In a small bowl, stir together the extra virgin olive oil, garlic, and a good pinch of salt and pepper. Spread half of the mixture onto the top of each crust.
  5. Top each with half of the mozzarella and half of the cheddar. The spread out half of the dill pickle slices onto each pizza. Then sprinkle each pizza with half of the dill weed.
  6. Bake the pizzas on the bottom rack of the oven for about 15-17 minutes. Alternatively, You can bake one on the bottom rack and one on a higher rack for about 10 minutes, then switch the pizzas to the other rack and bake for another 8-10 minutes.

Notes:

You can use pre-sliced dill pickles or whole dill pickles that you slice yourself. The amount of pickles you use may vary depending on your preference.
