A hearty soup filled with butternut squash, black beans, corn, and cheddar cheese makes for a delicious way to warm up on a cool fall day.
As the days start to get darker and a little cooler, soups, chowders, and chilis begin to make more frequent appearances on our menu. They are a favorite of mine year round, but especially during the colder and darker months.
This chowder is made with one of my most favorite fall produce items - winter squash, specifically butternut squash. I was very excited to see a butternut squash in my produce box from Melissa's Produce. Winter squash are so versatile in flavor, texture, and uses.
This soup is packed full of vegetables and black beans and then a sharp cheddar makes the broth thick and cheesy making this great way to eat more vegetables. I find that cheese almost always makes vegetables more appealing to kids, and really people of all ages. It's also a simple and hearty vegetarian meal.
Make a big pot of this cozy autumn chowder and get ready for a lovely fall. Serve it with a loaf of crusty bread or a side or corn tortilla chips.

Cheddar Butternut Squash & Black Bean Chowder
Ingredients:
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 celery rib, diced
- 2 medium carrots, peeled and diced
- 2 garlic cloves, minced
- salt and freshly ground black pepper, to taste
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon ground coriander
- 4 cups vegetable broth
- 1 cup half and half or cream
- 1/3 cup all-purpose flour
- 4 cups peeled and diced butternut squash
- 1 cup frozen corn kernels
- 1 can (15.5 oz.) black beans, drained
- 8 oz. extra sharp cheddar cheese, grated
- fresh cilantro, for topping, optional
Instructions:
- In a large soup pot, warm the olive oil over medium heat. Add the onion, celery, and carrots and cook, stirring often, until the onion is translucent. Add about 1/2 teaspoon of salt, 1/4 teaspoon black pepper, and the garlic and stir well.
- Stir in the smoked paprika, oregano, and ground coriander. Add the broth and stir well.
- In a medium bowl or glass measuring cup, whisk together the half and half and flour until smooth and slowly whisk it into the soup.
- Stir in the butternut squash. Let the soup come to a boil and then reduce to a simmer. Cook, stirring often, until the broth is thickened and the squash is fork-tender.
- Stir in the corn and beans and cook until heated. Remove the pot from the heat and whisk in the cheddar and handful at a time.
- Check and adjust seasoning as needed. Serve hot and top with chopped cilantro, if desired.
