Recently, I was invited to try out some barbecue sauce from Bar-B-Que Beast. I was quite excited to try their award-winning curry barbecue sauce. I knew it was going to be delicious and flavorful and I was definitely correct.
This sauce smells and tastes like an Indian-inspired curry, but also has traditional barbecue sauce flavors. The flavor combination is so good!
I had already been working on a barbecue chickpea tacos recipe and once I had this sauce in hand, I knew that it was destined for barbecue chickpea tacos with a curry twist.
The curry flavor lent it to adding some seasonal eggplant as well. Topped with a lemon yogurt sauce, cilantro, and pickled red onions, these tacos are bursting with flavor, texture, and yumminess!
This is a unique meal and something that we enjoyed a lot. The sauce has a bit of a spicy heat, which we love and the deep curry flavors and aroma made these tacos something extra special.

Curry Barbecue Chickpea & Eggplant Tacos
Ingredients:
- 1 tablespoon olive oil
- 1-1/2 cups diced eggplant
- 1 (15.5 oz.) can chickpeas, drained
- 1/3 cup curry BBQ sauce
- 8 small flour soft taco shells, for serving
- chopped cilantro, for topping
- quick pickled red onions, for topping
- 1/3 cup plain whole milk yogurt
- 1/8 teaspoon ground cumin
- juice of half a lemon
- salt, to taste
Instructions:
- In a small bowl, stir together the yougrt sauce ingredients and refrigerate until serving.
- Heat the olive oil in a small skillet over medium heat. Add the eggplant and cook, stirring once the first side is golden. Cook until the eggplant is almost cooked through and then stir in the chickpeas and BBQ sauce. Cook until hot, stirring frequently.
- Warm the taco shells (I like to use the burner flames if you have a gas stove) or the microwave.
- Place a couple spoonfuls of the eggplants/chickpea mixture on your shell and top with the yogurt sauce, cilantro, and pickled red onions.
