Beets have a long season and will start being available in early summer and continue to grow locally into the early fall. I use beets all year round. One of my favorite things to do is to blend up a cooked and peeled beet into a smoothie in the morning with some frozen berries.
Beets are naturally sweet, but also have a deep earthy flavor. They tend to be one of those foods people either love or they hate, but I think it's one of those vegetables that people may have not had prepared well in the past, so they feel like they don't like them.
So here are a bunch of recipe ideas to use your beets this season! Red beets, golden beets, striped (chioggia) beets - they are all delicious. Red beets definitely give food a lovely color, and golden beets tend to be a bit milder in flavor. And, don't forget that you can eat the beet greens, too!
Beets add lovely color and flavor to drinks, dips, and more. Pickled beets are always a classic, and these ones are made with golden beets.
