Individual Jack Skellington cheesecakes are not only delicious, but they are also a super fun Halloween dessert or party treat! These creamy little cheesecakes with a chocolate graham cracker crust are sure to please.
This is my last recipe for #HalloweenTreatsWeek and it's one I'm very excited to share! This recipe is based off of this one here. I made a few changes for mine and am so happy with how they came out.
If you or anyone you know is a fan of The Nightmare Before Christmas, these are the perfect treats to make! They are not complicated. The most difficult part is putting on the face (I did a few practice ones that did not make the photos, but were still delicious, and happily gobbled up by my family and I).
The chocolate base makes a nice contrast in color and flavor and is perfect for Halloween time. For this recipe I used Dixie Crystals granulated sugar, Wilton's pastry bag and round cake decorating tip 3, Adams Extract twice as strong vanilla extract, and these sturdy white cupcake liners from Sweets & Treats. All these items helped to make these little cheesecakes a success!

Individual Jack Skellington Cheesecakes
Individual Jack Skellington cheesecakes are not only delicious, but they are also a super fun Halloween dessert or party treat! These creamy little cheesecakes with a chocolate graham cracker crust are sure to please.
ingredients:
For the crust
- 2 cups chocolate graham cracker crumbs (about 16 crackers)
- 1 stick unsalted butter, melted
- 3 tablespoons sugar
- 1/8 teaspoon salt
For the cheesecake
- 16 oz. (2 blocks) cream cheese, at room temperature
- 2/3 cup sugar
- 2 large eggs
- 1-1/2 teaspoons vanilla extract
- 2/3 cup sour cream
For the chocolate topping
- 3 oz. semi sweet chocolate, chopped (or chips)
- 3 tablespoons heavy whipping cream
instructions:
How to cook Individual Jack Skellington Cheesecakes
- Preheat the oven to 350 degrees. Line two muffin tins with 20 liners.
- In a medium bowl, stir together the crust ingredients until well-combined. Spoon about 2 heaped tablespoons into the bottom of each muffin liner and press it firmly down with your fingers (you may have some leftover).
- In a large bowl, beat the cream cheese with a hand mixer until light and fluffy. Beat sugar until light and fluffy and then beat in the egg and vanilla.
- Stir in the sour cream until combined.
- Equally divide the cheesecake mixture into each muffin liner (about 2 tablespoons each).
- Bake for 15-18 minutes, until the cheesecake no longer looks wet and has set.
- Let cool in the muffin pan for about 5 minutes. Then carefully transfer each muffin liner to a wire rack to cool completely (about one hour).
- Heat the heavy whipping cream in a small pot until hot. Remove from the heat and whisk in the chocolate. Let sit for a couple of minutes and then spoon into a pastry bag with a #3 round tip.
- Carefully pipe the chocolate onto each cheesecake making the face of Jack Skellington.
- Store in a container in the refrigerator for up to 5 days, or freeze and thaw before serving.
