I hope everyone is enjoying #AppleWeek! A week long celebration of apple recipes! Apple season is one of my favorites because that means it is fall.
Apple picking with our family is a tradition we've done for years and now we get to take our kids, too, which makes it even sweeter!
Grab a bunch of these cookies to take along on your autumn adventures like looking at leaves, picking apples or pumpkins, or taking a stroll in the woods.

Apple Vanilla Oatmeal Cookies
ingredients:
- 1 cup instant oats, such as Flahavan's
- 3/4 cup whole wheat pastry flour
- 1-1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, melted and slightly cooled
- 1 large egg
- 1/2 cup pure maple syrup
- 1 heaped teaspoon vanilla bean paste, such as Taylor and Colledge
- 1 cup finely chopped apple, unpeeled

How to cook Vanilla Apple Oatmeal Cookies
- In a medium bowl, whisk together the oats through salt. In a large bowl, whisk together the butter through vanilla bean paste. Stir the dry ingredients into the wet until combined. Fold in the apple.
- Cover and bowl and refrigerate the tough for 30 minutes.
- Preheat the oven to 325 degrees. Line two baking sheets with parchment or silicone baking mats.
- Roll the dough into balls using a heaped tablespoon of dough. Place on the baking sheet 1-inch apart and flatten slightly.
- Bake for about 14-16 minutes, until the bottoms and sides are just golden. Let the cookies rest on the baking sheets for another 10 minutes and then remove to wire racks to cool.
