#AppleWeek continues with a post using one of my favorite apples - Envy apples! I knew I wanted to make at least one savory apple recipe this week and this stew was a yummy choice.
This recipe contains apple cider as well - a fall staple in our house. We love apples and apple recipes in our home and look forward to apple season every year.
Don't forget to check out the bottom of this post to see all of the apple recipes we are sharing today. I'm sure you will find a lot of new and creative apple recipes to try this year!
Moroccan Apple & Sweet Potato Beef Stew
ingredients:
- 1 tablespoon olive oil
- 1 lb beef stew meat
- 1 small onion, diced
- salt and freshly ground black pepper, to taste
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground red pepper
- 3 garlic cloves, minced
- 2 cups peeled and diced sweet potatoes
- 1/2 cup golden raisins
- 1 can (8 oz.) tomato sauce
- 3/4 cup apple cider
- 3/4 cup beef broth
- 1 large Envy apple, peeled, cored, and diced
- 1/4 cup sliced almonds
- minced parsley, for serving
- 8 oz. couscous, cooked to package directions
instructions:
How to cook Moroccan Apple & Sweet Potato Beef Stew
- In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the stew beef, onion, and a good pinch of salt and a few grinds of pepper. Let the beef brown and then stir. Add in the spices (cinnamon through red pepper) and stir well. When the beef is browned on all sides, stir in the garlic and cook for another minute.
- Stir in the sweet potatoes, raisins, tomato sauce, apple cider, and beef broth and let the mixture come to a boil. Reduce to a simmer and stir in the apple. Continue to simmer, stirring often, until the beef and sweet potatoes are tender (if the stew gets too dry, add another splash of cider/broth). Taste for seasoning and adjust if needed.
- Serve hot in bowls with couscous and top each bowl with some sliced almonds and parsley.
