We enjoyed this buckle a lot and ate it for both dessert and with breakfast a couple of times. I slightly adapted this recipe from here and it turned out perfect. I'm looking forward to trying out this recipe with other seasonal fruits in the future such as raspberries or cranberries.
This version is just bursting with delicious seasonal blueberries! It's a wonderful recipe to highlight blueberries this time of year and can easily be a dessert or be served along with the breakfast or a brunch.
Buckles are pretty easy to put together and bake. You need a 9-inch cake pan for baking and a hand or stand mixer to make the cake batter.
This is my last recipe post for #BlueberryWeek and I hope you have enjoyed all the delicious recipes ideas this week as much as I have enjoyed them! Please visit the bottom of this post to see all the other recipes being shared today.
Yield: 10-12 pieces
Blueberry Buckle
A rich cake studded with blueberries and topped with a streusel.
ingredients:
For the streusel
- 1/3 cup sugar
- 1/2 cup all-purpose flour
- 1/8 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon freshly ground nutmeg
- 1/4 cup (4 tablespoons) cold unsalted butter, cubed
For the cake
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1/4 cup (4 tablespoons) unsalted butter, softened, plus more for greasing
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/2 cup milk (I used 2%)
- 2 cups blueberries
instructions:
How to cook Blueberry Buckle
- Preheat oven to 375 degrees. Lightly grease a 9-inch round cake pan.
- Make the streusel. In a small bowl, stir together the sugar, flour, salt, cinnamon, and nutmeg. Cut in the butter until the mixture sticks together in crumb form. Refrigerate.
- Make the cake. Stir together the flour, baking powder, and salt in a medium bowl.
- Beat together the sugar and butter in a large bowl with an electric mixer (or in the bowl of a stand mixer with a paddle attachment) until light and fluffy. Beat in the egg and vanilla.
- Slowly begin to add the milk and flour mixture a little at a time and alternating between the two, mixing after each addition. End with flour. Fold in the blueberries until just combined.
- Spread into the cake pan. Sprinkle the streusel evenly over the top.
- Bake for about 40-45 minutes, until golden and an inserted toothpick comes out clean.
- Place on a cooling rack for at least 15 minutes before serving. Slice and serve from the cake pan, or remove to serve. Serve warm or room temperature.
