We live right outside Buffalo, so we don't "Buffalo" things lightly. It's serious business usually involving chicken wings, always blue cheese (never ranch), and Frank's hot sauce. I love things like chicken wing dip and Buffalo chicken mac n' cheese.
There are a lot of versions of Buffalo cauliflower out there. Many are breaded and/or baked, but this version doesn't involve any breading or batter. Instead this recipe roasts the cauliflower to make it extra flavorful and give it a bit of that yummy char.
Blue cheese is key for Buffalo recipes. It helps to cool off your mouth from the heat of the hot sauce and provides that creamy texture and flavor.
I've included a homemade blue cheese dressing for this recipe, but you can use your favorite store bought blue cheese in place of it if you prefer. I like to have some extra blue cheese crumbles though to sprinkle onto the hot cauliflower.
This recipe is my version of an appetizer we had at a local restaurant once. It's a delicious way to enjoy cauliflower and a great change-up from the usual chicken wings. It's great for a game day or movie snack.
These are never going to replace wings for us, of course, but this is a great snack or appetizer, or side dish to homemade pizza or chicken fingers. I served it along with celery and carrots for dipping up all the yummy dressing and to cool down the mouth as needed.
Mine come out around a medium level of heat. If you want it hotter, use less butter. If you want it more mild, use more. Or adjust the hot sauce level a little to suit your tastes and preference.

Roasted Buffalo Cauliflower with Homemade Blue Cheese Dressing
Ingredients
- 1 head (medium/large) cauliflower, broken into bite-sized florets
- 1 tablespoon olive oil
- salt and freshly ground black pepper
- 1/4 cup Frank's hot sauce
- 2 tablespoons unsalted butter, melted
- 1/4 teaspoon garlic powder
- blue cheese crumbles
- chopped celery leaves
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon milk
- 1/2 teaspoon sugar
- 1/4 teaspoon Worcestershire sauce
- 1/8 teaspoon garlic powder
- 2 tablespoons red or white wine vinegar
- a few grinds of fresh black pepper
- 1/2 cup blue cheese crumbles
- salt, to taste
Instructions
- Preheat the oven to 450 degrees. Toss the cauliflower and olive oil and a little salt and pepper together on a rimmed baking sheet. Roast for 10 minutes, then flip over the cauliflower and roast another 12-18 minutes, until fork tender.
- While the cauliflower cooks whisk together the hot sauce, butter, and garlic powder along with a pinch of salt in a large bowl.
- Prepare the dressing in a small bowl by whisking together the mayonnaise through black pepper and then stirring in the blue cheese. Season with salt, as desired. Refrigerate until serving.
- When the cauliflower is done place it in the bowl with hot sauce mixture and stir until well-coated. Transfer the cauliflower to a large platter and top with extra blue cheese crumbles and celery leaves, if desired. Serve with chilled dressing.
Notes:
Adjust the butter/hot sauce ratio as needed to suit your tastes.
