Hummus is an easy dip to make at home. Tahini is a hummus ingredient, but it can be a little pricey and it's something that not everyone keeps in their home all the time. Peanut butter is a budget-friendly alternative that most people tend to have in their pantry.
This dip is a terrific way to encourage kids and adults alike to eat more veggies. Serve this peanut butter hummus with raw vegetables like carrot sticks, celery sticks, cucumbers, and more. You can also serve it with apple slices, pretzels, pita crackers, and more.
Hummus is a great recipe to make for a snack, appetizer, or lunch. Pack it up in your lunchbox or keep it in the refrigerator for an easy snack during the week. I like to make a vegetable tray with a homemade diip like this for parties and gatherings, especially in warmer weather for on the patio with a cold drink.
Peanut Butter Hummus
Ingredients
- 1 can (15 oz.) garbanzo beans
- 2 tablespoons creamy peanut butter
- 2 tablespoons fresh lemon juice
- 2-3 tablespoons extra virgin olive oil
- 1 garlic clove
- 1/4 teaspoon paprika, plus more for topping
- salt to taste
Instructions
- In a food processor, add the garbanzo beans, peanut butter, lemon juice, 2 tablespoons extra virgin olive oil, garlic, paprika, and a good pinch of salt.
- Pulse a few times and then blend until smooth, stopping to scrape down the sides as needed. Add more olive oil if the mixture is too thick (you can also add a little water to help thin it out a little).
- Place the hummus in a bowl and top with a little more olive oil and a sprinkle of paprika, if desired. Serve with fresh vegetables, pretzels, crackers, and/or apple slices.
- Cover and refrigerate any leftovers.
