Oats, flax, bananas, and spinach are blended together for a fun and delicious green muffin perfect for toddlers and the whole family!

I found this recipe recently and used it as a guide for making these muffins. Let me tell you how tasty these muffins are -- so yummy! Sweet from the banana, a little earthy from the spinach and flax, and a touch of warm spice from nutmeg and cinnamon. Nutmeg is a spice I love with bananas and I frequently use with greens, so it was a must-have in these.

These are terrific for a make-ahead breakfast or to pack in a lunchbox for both kids and adults. They are perfect for back to school time when you want easy breakfasts or snacks. They are a great snack or breakfast item for toddlers and preschoolers as well.

I love the vibrant green color from the (pretty much liquefied) spinach! It makes them so pretty. They would be fun for Halloween, Christmas, St. Patrick's Day, or anytime you want a fun treat. Adding a cup of semi-sweet or dark chocolate chips also makes them even extra special.

The base of these muffins is blended quick oats rather than flour. The ingredients are blended up in a blender or food processor and then mixed together in a bowl.

These banana spinach oat muffins store well for a couple of days in an airtight container, but since they are quite moist, they don't last long. They are best eaten within a couple of days of baking.

Banana Spinach Oat Blender Muffins

Oats, flax, bananas, and spinach are blended together for a fun and delicious green muffin perfect for toddlers and the whole family!

ingredients:

  • 2 cups quick oats
  • 1/4 cup ground flax seed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup whole milk
  • 2 very packed cups baby spinach
  • 1/4 cup olive oil
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup sugar
  • 2 large ripe bananas
  • 2 large eggs

instructions:

How to cook Banana Spinach Oat Blender Muffins

  1. Preheat the oven to 350 degrees. Spray or grease two muffin tins (or use muffins liners).
  2. In a blender or food processor, blend the dry ingredients (oats through nutmeg) until the oats resemble flour. Pour into a medium/large bowl.
  3. Add the milk, spinach, oil, and vanilla to the blender/processor. Blend on high until the spinach is as smooth as possible. Blend/pulse in the sugar, bananas, and eggs until smooth.
  4. Pour the liquid ingredients into the bowl with the dry ingredients and stir until combined.
  5. Pour into the muffin cups filling each one about 3/4 high. Bake for approximately 19-21 minutes, or until just golden and an inserted toothpick comes out clean. Let sit in the muffin tin for about 5 minutes and then remove the muffins to cool.
  6. Store in an airtight container.

  8. What a genius idea and a great way to hide spinach! I had to become an adult to eat spinach but I know if my mother had made these, I would have definitely eaten them more so for them being green than anything else. :) What fun!
