Beyond strawberry rhubarb pie: A rhubarb recipe round-up

Rhubarb season is here and there are so many ways to enjoy this tart seasonal vegetable. Strawberry rhubarb pie is the most popular, but there are so many other ways to use it.
 
Not that there's anything wrong with strawberry-rhubarb pie, of course. It's delicious and it's a classic for very good reason. But, there are so many other tasty things you can make with rhubarb. It's often an under-appreciated ingredient, but it's popping up in gardens all over our area right now, so it's the perfect time to explore other uses.
 
Rhubarb is considered a vegetable and you only eat the stalks/stems (the leaves are toxic). It's often treated more like a fruit for cooking; however, there are many savory ways to enjoy it. It adds a terrific tartness and tang making it a terrific contrast to sweet flavors.
 
I grew up with a giant rhubarb plant in my yard and it seemed like everyone had one where I grew up. We enjoyed rhubarb desserts a lot, but mostly only strawberry rhubarb pie and strawberry rhubarb crisp.
