If you love peanut better and jelly, then these are cookies for you! These peanut butter cookies are turned into thumbprint cookies and your favorite jelly (or jam) is added the the center.
Thumbprint cookies are a favorite of mine, especially these walnut and jam ones that I make every year for Christmas. Those cookies are a holiday staple for our family. These peanut butter and jelly ones are more for anytime of the year.
What are thumbprint cookies? They are a cookie that you partially bake and then use your thumb (or the stick end of a wooden spoon) to create a well that you fill and then finish baking. In this recipe, the peanut butter cookies are filled with jelly or jam.
I used raspberry jam in about half of these cookies, and grape jelly in the other half. Both are delicious. Strawberry jam is another favorite and blueberry or mixed berry would be great choices, too.
You can use whatever your favorite jam or jelly is to eat with peanut butter. My favorite is strawberry jam! I like the texture that jam has and the pieces of fruit in it.
These cookies are terrific for an after school snack or to bring to a party or potluck. They are also nice to have around for a special weeknight dessert. They go well with a very cold glass of milk.
When making peanut butter cookies, I like to use a creamy peanut butter and not one of the all-natural ones that need to be stirred. This helps the peanut butter to smoothly combine into the cookie dough.
When baking these cookies, you'll want to line with baking sheets with parchment paper, or silicone baking mats. These will prevent the cookies from sticking to the pan, and also help to prevent any leaking jam or jelly from scorching to the pan.
Make a batch of these cookies for your pb&j fans (or for yourself)! They are a cookie that has always been a hit when I've made them.

Peanut Butter and Jelly Thumbprint Cookie
Peanut butter and jelly thumbprint cookies are a delicious dessert or snack for fans of peanut butter and jelly.
Ingredients
- 1-1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- your favorite jam, jelly, and/or preserve(s)
Instructions
- Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour though salt and set aside.
- In a large bowl, using an electric mixer (or a stand mixer with the paddle attachment), beat the butter and sugars together until light and fluffy. Beat in the peanut butter and egg, and then the vanilla.
- Slowly mix the dry ingredients into the wet ingredients until just incorporated.
- Using a tablespoon cookie scoop to gather the dough. Roll into a ball and place on a baking sheet about 1-inch apart. Bake, one sheet at a time, for 7 minutes.
- Then remove and print each cookie with your thumb, trying to make a round well. Fill each well with about 1/2-1 teaspoon jelly.
- Return to the oven and bake for another 9-11 minutes, until the bottom and sides are just golden.
- Let cool on the baking sheet for 5 minutes, then remove the cookies to a wire rack to continue cooling. Repeat until all dough has been used.
