Apple picking season always brings our home a plethora of fresh apples of all different varieties. We live in the western New York region which is a big apple growing area with many local orchards. Our favorite is one that even has a heritage orchard where you can try apples you'd never see in the grocery store.

Some of my favorite apples for baking include Cortland, Northern Spy, Granny Smith, Crispin, Jonagold, and 20 Ounce. In pies I like to use some tart or sweet-tart apples like these varieties as they add nice contrast to the sweetness of the dessert.

I also like to use apples that hold their shape when cooked rather than start to breakdown and fall apart (or a combination of firmer and softer for some contrast). 

In general, I like to save the softer and sweeter apples for things like applesauce or apple butter. These apples include varieties like McIntosh, Macoun, Fuji, Gala, and Golden Delicious. 

Sour cream apple pie is a lovely dessert to serve in the autumn or during the holidays like Thanksgiving. Its filling is lightly sweet and full of apple chunks. Then the topping provides a sweet contrast and texture.

Another thing I really enjoy about this pie is that it doesn't contain any spices. Apples are generally paired with cinnamon, nutmeg, ginger, and other warm spices. This pie recipe really allows the apple flavor to shine through.

For this recipe you can use a storebought crust, or your favorite crust recipe. I usually use this pie crust recipe in my Apple Crumb Pie (another favorite apple pie recipe) post when I make a homemade version.

Sour Cream Apple Pie

Apple pie is taken to the next level with this recipe for a rich and creamy sour cream apple pie.

Ingredients

  • 1 recipe single pie crust
  • 2 large eggs
  • 1 cup full fat sour cream
  • 6 tablespoons all-purpose flour, divided
  • 3/4 cup sugar
  • 1/2 cup light brown sugar, divided
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 3 heaped cups peeled and chopped tart apples
  • 3 tablespoons cold unsalted butter, cubed

Instructions

  1. Roll out your pie crust and fit to a standard 9-inch pie plate. Refrigerate until needed.
  2. Preheat the oven to 375 degrees.
  3. In a large bowl whisk together the eggs, sour cream, 2 tablespoons flour, sugar, 1/4 cup brown sugar, vanilla, and salt until no lumps remain. Stir in the apples. Pour into the prepared pie shell. Bake for 20 minutes.
  4. While baking, combine the remaining 4 tablespoons flour, 1/4 cup brown sugar, and butter in a small bowl until it comes together in a crumb form.
  5. Sprinkle across the top of the pie and bake for another 20-25 minutes, or until the filling is set and golden.
  6. Cool completely before slicing and serving. Cover and refrigerate any leftovers.

  5. I'm amazed with 2 babies you manage to get anything on the table for dinner, even frozen chicken and waffles fries. Ha. Let alone be able to have the focus to make a delicious looking pie like this! You're are right, are apples are the best here and it's time to make a pie, I'm going to have to give this a whirl. And did you see the spread of pies today in today's paper. Holy moly do they look good!
