Stuffed sugar cookies

Stuffed sugar cookies are a great cookie to use for a gender reveal. Put the colored disc inside and have your friends and family take a bite.

My posts have been sparse the past few months. Moving was a big part of that, but this post will provide a bigger explanation for my absence. Life has been crazy lately and it's only going to get crazier, but in a really amazing way! After many years of struggles and loss and heartache, my husband and I are expecting twins this summer and we couldn't be more thrilled and excited! The past few months I struggled with all-day "morning" sickness and couldn't even stand the smell of most food cooking, so blogging was tough! Now that phase is behind me and all I want to do is eat (and sleep)!

I made these cookies for a surprise treat recently at an open house we had for our family to come see our new home.

I modified this recipe to make these cookies to share for a surprise "gender reveal." They turned out just as I was imagining so I was very happy. We gave everyone an "A" cookie and had everyone bite on the count of three and then did the same with the "B" cookies. The below recipe made just over 2 dozen cookies.

Stuffed sugar cookies
2-3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1-1/2 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
about 24-28 melting candy wafers, or milk chocolate discs 

In a medium bowl, whisk together the flour through salt and set aside.

In a stand mixer with paddle attachment, beat the butter and sugar on medium speed until light and fluffy. Beat in the egg and vanilla. 

On low speed, slowly add the dry ingredients and mix until the dough comes together. Use a rubber spatula as needed to clean off the sides of the bowl.

Cover the mixing bowl with plastic wrap and refrigerate for one hour.

Line two baking sheets with parchment paper. Preheat the oven to 350 degrees.

Take about 1-1/2 tablespoons of dough into your hand and flatten. Place the candy disc (color of your choice) or chocolate disc in the center and then fold the dough around the wafer making sure it's covered. Roll into a ball*. Slightly flatten and place on the cookie sheet. Repeat until all the dough is used.

Bake for about 8-10 minutes, until the bottom and edges are just golden. Let cool on the baking sheet for 5 minutes and then transfer to a wire rack to cool. When fully cooled, store in an airtight container.

*At this point you may want to roll the cookies into sugar to make a classic sugar cookie. Since I was using them for a gender reveal and didn't want any color showing through the top, I skipped this and frosted them instead.
