Sofritas are a copycat recipe from Chipotle. This filling combines spiced firm tofu and canned pinto beans in a slightly sweet, smoky, and spicy sauce of ancho chiles, chipotle chile peppers in adobo, tomato sauce, and garlic.
You make a quick homemade chile and tomato based hot sauce and then use it to spice up the filling. For the sauce you need a can or jar of tomato sauce. This is plain tomato sauce (not a pasta sauce) without any spices or other flavorings in it.
You can find dried ancho chiles at many larger grocery store or you can order them online. They are not a very hot pepper and have a sweet, almost raisin-like flavor to them.
Chipotle in adobo peppers are smoked jalapenos in a spicy sauce and these are readily found in can at the grocery store. These peppers and the sauce are where most of the heat comes from in this recipe.

This sounds great! I actually love tofu, but I agree, it can be mushy + unappealing in some forms. It looks awesome like this, though, for sure!

ReplyDeleteI just happen to have a can of ancho chili's in my pantry. I bought is as a whim item as things like this are difficult to find in Asia. Now you have given me the perfect recipe and of course will have to make a side of rice.
