This pie is inspired by a recipe I found in an old paperback copy of The Old Farmer's Almanac Colonial Cookbook which used to be in my mom's cookbook collection. This book is loaded with old-fashioned recipes including one for an onion pie.
This pie is pretty much a quiche (okay, it is a quiche). But, this one is really all about the two pounds of caramelized onions and not the eggs. The filling is loaded with sweet caramelized onions and crispy salty bacon. A perfect compliment to the eggs. One of the best parts of any pie? The crust. While a store bought crust is always a fine choice and a time saver, homemade pie crusts are not overly complicated to make.
I will often make them a day ahead of time and then pull them out of the refrigerator about 30 minutes before I'm ready to roll and assemble the pie. This helps to make the process quicker than making the pie crust the day of as it does require some refrigerator time.
