Chocolate Chip Snowball Cookies are a perfect cookie to add to your holiday cookie trays, Christmas parties, and gift giving this year. They are simple to make and they are really yummy.
These cookies are a variation on these Mexican Wedding Cake Cookies that come from my great-grandmother. The difference is that this version contains mini chocolate chips rather than toasted walnuts. Otherwise, they are the same base recipe.
I like to use mini chocolate chips; however, you can use regular size if you prefer. I like how the mini chips almost speckle the dough with little bits of chocolate. Here I use semi-sweet, but milk chocolate or dark chocolate will also make a delicious cookie.
Chocolate Chip Snowball Cookies
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup icing sugar, plus another 3/4 cup for rolling
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup semi-sweet mini-chocolate chips
Instructions
- Line two baking sheets with parchment paper and preheat the oven to 325 degrees.
- Cream together the butter and sugar in the bowl of your stand mixer with a paddle attachment or using a hand mixer. When it is light and fluffy, add the vanilla and continue to mix until combined.
- Turn the mixer to low and slowly add the flour and salt. Mix until just combined and then fold in the chocolate chips with a wooden spoon.
- Shape the cookies into 1 tablespoon balls, rolling in the palm of your hand. Place about 1/2-inch apart on the baking sheets. Bake for about 9-11 minutes, until the bottoms are just turning golden. Place the cookies on a wire rack and repeat until all the dough is used.
- When the cookies have cooled for about 10 minutes, gently roll them in a bowl with the remaining powdered sugar, shaking off excess.
- Return to the wire racks to fully cool.
