Cashews are roasted and coated in honey, vanilla, and sesame seeds to make a sweet and delicious snack. These make a lovely snack to have with some drinks or to set out at a party.

This recipe is my attempt to recreate some honey sesame cashews that I've purchased at Trader Joe's in the past. They are also similar to some cashews that I had in Thailand a couple of times.
Roasted nuts are a favorite snack of mine and cashews are a particular favorite. These are pretty simple to put together and don't take very long in the oven. While I always enjoy roasted nuts that are simply flavored with some salt, I also enjoy them flavored in different ways.
These cashews only require a few ingredients (in addition to the cashews themselves). Oil (I use coconut in this recipe because I like the flavor it imparts here, but olive oil will work), honey, vanilla extract, sesame seeds, and salt.
You need to mix up the coating ingredients, then stir the cashews in. Then bake them, top with a bit of salt, and then let them cool so the coating sticks to the nuts and hardens.
Bake these nuts on a baking sheet lined with parchment paper. Or, for a reusable option, use a silicone baking mat to prevent the nuts from sticking and the honey from burning to the bottom of the baking sheet.
Store these nuts in an airtight container for several days. They are great to have during a game night with a drink or to put out at a party or on the patio when you are sitting out on a nice day.
Honey Sesame Cashews
Ingredients
- 1-1/2 tablespoons coconut oil
- 2-1/2 tablespoons honey
- 1 teaspoon pure vanilla extract
- 2 teaspoons sesame seeds
- 1/4 teaspoon fine sea salt, plus more for sprinkling
- 2 cups raw cashews
Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
- Mix the coconut oil, honey, vanilla, sesame seeds, and salt in a medium bowl. Stir in the cashews until they are well coated. Pour onto the baking sheet into a single layer.
- Bake for about 15 minutes, stirring about halfway through. You want the cashews to be golden and the glaze to be thickened and sticky. Remove from the oven and sprinkle with a couple pinches of salt.
- Let the nuts cool completely so the glaze will be hardened and stuck to the nuts. Serve or store in an airtight container.
