This pie also uses a lot of walnuts, which like other nuts can be on the expensive side. So, for us, this is a special occasion pie that we really savor and enjoy. I usually make it for my husband's birthday when he requests it or when we are having company like at Thanksgiving.
I use my favorite pie crust recipe most of the time and it uses all butter for the fat and vodka for some of the liquid. The vodka evaporates out of the crust better than water, creating a lighter and flaky crust.

This pie will make a lovely addition to your Thanksgiving dessert table, but it's terrific for a dessert anytime you need something special and delicious. Surprise your guests and family with this decadent pie.
Honey Walnut Pie
Ingredients
- 1 single pie crust recipe (I like this one)
- 1-1/4 cups walnut halves
- 1/2 cup roughly chopped walnuts
- 3 large eggs
- 1/2 cup granulated sugar
- 1 cup runny honey
- 3 tablespoons unsalted butter, melted and slightly cooled
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350 degrees. Spread the walnuts on a baking sheet and bake just until fragrant and lightly toasted. Remove, set aside, and bump up the oven to 400 degrees.
- Fit the pie crust to a 9-inch pie pan.
- Whisk the eggs in a large bowl. Then whisk in the sugar until dissolved. Stir in the honey, butter, vanilla, and salt until combined. Then stir in the walnuts.
- Pour into the unbaked pie shell. Bake at 400 degrees for 10 minutes. Then reduce the heat to 350 degrees and continue baking until the pie puffs slightly, the walnuts are golden, and the pie is set, about 35-40 minutes.
- Let cool completely. Serve at room temperature or refrigerate until serving time if not eating that day.

ReplyDeleteWhat a delightful pie! My mother always found places to find black walnuts and my husband and I actually have a tree in our yard but I'm too lazy to go through the drying and hammering. Now, it's pretty easy to find black walnuts at the store.
