Does everyone remember the brightly colored sherbet that comes in orange, strawberry, lime, and probably other flavors? I was never a fan as a kid (I much preferred ice cream).

I hadn't had sherbet in many years. After a bit of reading, I figured out that sherbet is made from fruit juice with a bit of dairy to make it creamy (unlike a sorbet, which is all fruit juice). It's really simple in ingredients, but the flavor, especially using fresh oranges, is so bright and really makes your tongue dance.
It must have been the warm-up to above freezing that put me in the mood to make a frozen treat (although as I write this, a blizzard warning has been issued for tomorrow). If you've never made sherbet before, I recommend giving it a try - it's really delicious and made with ingredients you can recognize!
Honey orange sherbet
2-1/4 cups freshly squeezed orange juice (about 5 oranges)
2 teaspoons orange zest
about 1/4 cup honey
dash of fine sea salt
1/2 cup heavy whipping cream
Mix the orange juice and zest in a large bowl or large glass measuring cup with a spout (preferable). Whisk in the honey, a couple tablespoons at a time, until it reaches your desired sweetness. Whisk in the salt. Add the cream and whisk slowly until just combined.
Refrigerate the mixture until cold, at least a couple of hours. Then churn and freeze according to your ice cream maker's instructions. Transfer to a freezer container and freeze until your desired consistency.
I've never made sherbet before and like you I always chose ice cream as a child. This sherbet looks so fresh and delicious! I guess I need to give sherbet making a try :)

I've made sorbet before but not sherbet! But I love this orange flavor. It sounds so bright and creamy!
ReplyDeleteI have a couple of sherbet eating fiends in my circle of friends. I do not use the word 'fiends' lightly. In fact they don't like ice cream, which of course I have no understanding for, but only sherbet. So now I have something tantalizing to share.

I prefer ice cream to sherbet and sorbet, too, but I don't think I will say not to this honey orange sherbet!
