Hot, spicy, tangy, and delicious -- these refrigerator turnip pickles add terrific flavor to any meal or relish tray!
I like the bit of tangy vinegar flavor pickles provide to eat alongside of many meals. We often have pickles, olives, or a relish tray of sorts on the table with our dinner or lunch. Turnip pickles are a fun twist and the flavors in these go perfectly along the side of many Indian inspired meals.
I make all kinds of refrigerator pickles in the late summer and early fall. Pickles never go uneaten in our home and it's a terrific way to use up some produce and make something delicious in a small batch. I like to can as well, but refrigerator pickles allow more creativity and a small batch to try something new. Plus they stay crisper, which I enjoy.
These pickles add a bit of heat and that bright vinegar flavor. The spices compliment meals like Saag Paneer, Chana Masala, Easy Slow Cooker Butter Chicken, curries, lentil dishes, and more. I like to add just a few of these turnip pickles to the side of my plate for contrast, color, and flavor.
Turnips are something I did not grow up eating. I was introduced to them as an adult and now I enjoy them a lot. The smaller they are, the more mild in flavor. I prefer smaller ones, but making them like this will all the spices and flavors is a great way to use up any size turnips.
These pickles are spicy and a bit hot, but not over-the-top hot. It will depend on the heat level of the jalapeno pepper(s) you use. I find that jalapenos can vary a lot in their heat levels. Use one pepper for less heat (or even just a few slices) and two for more heat.
You can leave the pepper out completely as well if you want just the spice flavor without the heat. That's the beauty of refrigerator pickles - they are very versatile and adaptable. For this batch of pickles, I had red jalapeno peppers, but they are generally sold as green.
The liquid from these pickles will stain as it contains turmeric, so handle the jar and pickles with care. Turmeric gives the pickles such a lovely yellow color.

Hot and Spicy Refrigerator Turnip Pickles
ingredients:
- 3/4 cup white vinegar
- 2 cups filtered water
- 1 or 2 jalapenos, seeded and thinly sliced (use one for less heat, two for more)
- 2 garlic cloves, thinly sliced
- 1 bay leaf
- 1 teaspoon ground turmeric
- 1/4 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1-1/2 tablespoons salt
- 1/4 teaspoon ground coriander
- 1-1/2 lbs. unpeeled turnips, well-scrubbed, quartered, and sliced into 1/4-inch slices

How to cook Hot and Spicy Refrigerator Turnip Pickles
- Add all of the ingredients except the turnips to a large pot. Heat over medium heat, stirring occasionally, and bring to a boil. Add the turnips and return to a boil. Reduce to a simmer and cook, stirring occasionally, until the turnips are just fork-tender, about 7-8 minutes.
- Remove the pot from heat and let cool. Ladle everything into a quart jar or other glass container (remember -- they will stain!). Place in the refrigerator and let cure at least 24 hours before eating. Remove the bay leaf after 24 hours.
